
Breakfast has never been my favorite meal--really, often I'd just rather not--but my new love for the morning repast is roasted veggies over some sort of starch (quinoa, couscous, etc.). Add a few walnuts and some shredded seaweed...yum yum YUM! (No, really...you should try it!)
That looks incredible. how long do you bake? at what temp? what all is in that colorful concoction? do tell!
