(We've been making a vegetarian version of this tasty dish for at least 20 years now...while there are many versions, the black-eyed peas are what make it Hoppin' John. Serve with some greens and some cornbread and you're good to go!)

We enjoyed our greens and black eyed peas. My friend cooks hers with a dollar bill in there, and whoever gets the dollar is supposed to come into money. It wasn't me...
